Because we all know whats life without something sweet? This is one of my favourite recipies when I am needing a sweet treat!
1 ½ cup of coconut cream
¼ cup of pure maple syrup
2 ½ cups of desiccated coconut
½ cup of dark chocolate
½ cup of pitted dates (soaked in hot water and drained)
1 cup of raw mixed nuts
1 cup of rolled oats
In a food processor blend the mixed nuts, oat bran and dates. Line a 28-18cm tin and press down the mixture, spreading to each end.
In the food processor (no need to clean in between uses) combine, 1 cup of coconut cream, honey and coconut to make a creamy filling. Once combined spread out evenly across the base and freeze for 10-15 minutes.
In a sauce pan melt the dark chocolate and combine with ½ cup of coconut cream (continue to add extra coconut cream or even cacao powder until desired texture) layer on top of chilled mixture. Chill until liquid is set and enjoy!
Dairy free topping:
¼ cup cacao powder
½ cup of coconut oil
¼ cup of Manuka honey
Combine all ingredients in a saucepan and layer on top of chilled mixture. Chill until liquid is set and enjoy!
