Whole food rice paper rolls

 

Rice paper rolls are by far one of my favourite snacks or meals to whip up in the kitchen! Although I must admit.. they are time consuming! but thats exactly why I aim to make a weeks worth at a time. For snacks I usually have 3 rolls, and for lunch or dinner meals I usually have 5-6 depending how hungry I am! 

The best part about rice paper rolls is that you can be so creative! I am a sucker for vegetarian ones loaded with vegetables and fresh herbs, but adding protein such as tuna or chicken is a great way to get your protein intake in, I love the following recipe! 

Ingredients for rolls:

  • Rice paper rolls (I usually buy the large ones)
  • seseme seeds 
  • 1 cup of cooked quinoa 
  • 1 cup of fresh chopped herbs 
  • 1 bag of coleslaw (I love the herby slaw!) without the dressing 
  • Chopped up peppers 

Method:

  • Place single rice paper into a bowl of hot water until soft, 
  • Lay out the rice paper on the bench adding the ingredients into the wrap into a small ball 
  • Wrap the rice paper up like a parcel not too tight 
  • Store in the fridge for up to 7 days 

Sauce ingredients:

  • 1 tablespoon of soy sauce 
  • 2 tablespoons of sesame oil 
  • 1 tablespoon of lemon juice 
  • 1 tablespoon of apple cider vinegar 
  • 1 tablespoon of sweet chilli sauce 
  • 1 teaspoon of sesame seeds 
  • 1 teaspoon of fresh garlic

Sauce method:

  • Throw ingredients into a jar or bottle with a lid, shake up very well and enjoy with your rice paper rolls!
